Damp draining congee
Job’s tears is the keynote in this recipe. It’s famous for draining dampness and I would incorporate this recipe in weekly rotation when you meal prep.
Dampness is excessive moisture, fluid accumulation, and metabolic waste buildup. Often caused by weak spleen function or environmental humidity, it leads to heavy, sluggish sensations, such as edema, fatigue, brain fog, and digestive issues.
Ingredients
1/4 cup Job's tears
1/4 cup White rice
4-5 cups Water (but I use broth for more nutrition)
Optional ingredient: 2 handful of conpoy (dried scallop) to be placed in Step 2 of the instructions
Instructions
Prep: soak the Job's tears in water for at least 1–3 hours (or overnight) to soften them.
Pressure Cook: Pour ingredients into the Instant Pot. Select Pressure Cook (High) for 30 minutes.
Natural Release: for at least 15 minutes. Use “sauté function” for a more “creamy”
Prior to serving (optional)
Peanuts
Ginger & scallion sauce
Sesame oil
